1 1/2 cups cooked rice (instant is fine, jasmine or basmati done the regular way are best)
2 T vinegar
1 t. salt
3/4 t. curry powder ( I like green best)
2 cups or so cut up cooked chicken
1 cups chopped celery
about 1/2 green bell pepper, chopped (more if you like it)
1 pkg. frozen peas, cooked & drained
3/4 cups mayo (you could also use a really good plain yogurt)
2 T olive oil
Combine rice, olive oil, vinegar, salt and curry powder; chill overnight. Combine chicken, celery, green peppers, peas and mayonnaise the next day; combine with rice mixture and chill several hours.
A more plain one but sooo yummy..
2 cups or so of cut up cooked chicken
1 can of manadarin oranges, drained
small pkg. slivered almonds
either a teaspoon (give or take depending on taste) of cinnamon or a teaspoon of curry powder
mix well and chill for a few hours
